Fatty Acid Profile

The seeds of fenugreek contain about 7.8% oil, which has a golden-yellow colour. The oil has a disagreeable
odour and a bitter taste. Shahat (1947) studied Egyptian fenugreek oil and reported that it consists of 33.7%
linoleic, 35.1% oleic and 13.8% linolenic acids. Badami& Kalburgi (1969) analysed the fenugre ek fatty acids,
and he detected hexadecanoic acid. Baccou et al. (1978)studied the fatty acid composition of fenugreek oil from
different countries and found that the percentage oflinoleic and linolenic acids differ according to place and
conditions of cultivation of plant, and the oils hadmarked drying properties.
